It's excellent chili weather. I'm rather proud of myself right now -- just cooked up a big batch of chili with beef, turkey, celery, green pepper, onion and a lot of beans and macaroni. The only flaw is that I left the macaroni in too long so it's rather mushy. But other than that, it's pretty nice, and I can't wait to have it later because chili always tastes best the next day.
Is it just me or is chili one of those foolproof dishese to cook that make everyone happy? And you can pretty much put in anything, as long as you have chili spices, beans and tomatoes. One of my favorite chilis was using leftover brats for the meat and an old skunky can of beer with the usual fixins. It had a nice little bite to it.
So I guess I pose this question to ya'll -- what's some of your favorite chili fixings?

You know what's weird. There's this place in Wicker Park, Earwax Cafe, that has the most ass-kicking veggie chili on earth. On earth, I tell you! With tons of crap in it. And now I want to go.

my chili is some odd chili/gumbo mixture. I make a roux for it. I use venison usually and andouille sausage (or some sort of smoked sausage), only a few beans (I hate beans), cabbage, corn, peppers, okra, onions, tomatoes (of course) and whatever other vegees I have on hand.
It's not spicy, but damn it tastes good.
I simply cannot have chili without hot sauce, sour cream, cheddar cheese, and corn bread. Nummy nummy!
Cumin. Lots of cumin kicks ass. And sharp cheddar.
